How to make your own Vegan IceCream Cake

As a kid, my family always went to Dairy Queen to get a Treatza Pizza for special holidays. I looooove Treatsa Pizza, and Tegan especially - always asked for an Icecream cake for her birthday. Although we still indulge in DQ's cakes, we thought it would be fun to make our own! It's super easy, healthy and it's a cake you can feel very good eating. Yes. Please.

Ingredients for Chocolate Crust

  • 20 soaked dates

  • 2tbsp flax seeds soaked ( 1-1 ratio with water ) 
     
  • 6 tbsp gluten-free flour (any flour preferred is fine) 
     
  • 5 tbsp cacao powder
     
  • 1 tsp vanilla
     
  • 1/4 cup water
     
  • 3 tbsp coconut oil
     
  • 1 tbsp maca powder
     
  • some salt to taste 

Directions for Crust

Put all ingredients into Vitamix / blender and blend until smooth. Pour into cake plate on top of parchment paper. (We cut ours into a circle so it fit evenly in the pan) 

Ingredients for the Vegan Icecream

  • 1 can of coconut cream

  • 1 cup of soaked raw cashews

  • 3 tbsp coconut oil

  • 1 tbsp maple syrup

  • 2 drops of stevia for added sweetness

  • and a pinch of salt :) 

Pour on top of Chocolate Layer and set aside 

Put the Icecream cake into the freezer for a good 3-4 hours until frozen! 

Ingredients for Caramel Sauce & Chocolate Sauce

  • 20 soaked dates

  • 1 cup of date water

  • a pinch of salt

  • a pinch of cinnamon

    BLEND

Take out half of the sauce and that is your caramel sauce! Now to the remainder add 2 tbsp cacao and blend it up -that becomes your chocolate sauce! Layer up with goodies - we used walnuts and chocolate chunks and then smothered it with the chocolate and caramel sauce! ENJOY!
